Bluefish

Salt and pepper
Skin the bluefish, (no need to scale it if you remove the skin) cut the
filets down to the back bone. Place the filets on a broiler pan lined with
lettuce leaves.
Baste the filets with a mayonnaise based salad dressing (creamy
cucumber works well). Add salt and pepper.
Broil for approximately 10 minutes, or until the fish is just turning
light brown.
