3/4 cup Flour
2 tb Corn starch
1/4 ts Baking soda
1/4 ts Salt
1/4 ts Sugar
1/8 ts Baking powder
3/4 cup Water
Cut fillets into strips roughly 1 1/2" to 2"
length-wise. Mix all other ingredients together.
Dip fish fillets one at a time and fry at medium high temperature. Drain on paper towels.
To make a slightly different variant - substitute
beer for the water and follow recipe exactly the
same way.
