Grilled Trout with Garlic and Sun Dried Tomato

8 clove Garlic
4 tb Parsley
2 tb Sun dried tomatoes
1 ts Salt
1/4 cup Olive Oil
1 1/2 lb trout fillet

Finely mince the garlic, parsley and sun dried tomatoes. Sprinkle with salt and stir in the oil. Store, covered in the refrigerator overnight.

Cut the fillet into 4 portions and smear the tomato mixture over them. Grill over medium heat for 4-5 min per side.
