Turkey Soup Stock
Ingredients
1 Turkey or chicken carcass
Water
1 Onion
2 Carrots
1 tsp Celery seed; or stalks
2 Bay leaves
2 tbsp Parsley
1 tbsp Sage leaves
2 tbsp Oregano leaves
1 tbsp Rosemary leaves
2 Cloves - whole
Cram as much of turkey carcass
& leavings as will fit into a large pot. Use all the leavings, including
skin, even if you plan on de-fatting the stock. Add remaining ingredients and
cover with water to within an inch or so of the top. Cover and cook (Bring to a
boil then simmer) for about 2-3 hours. De-fat, strain out solids, package in
pints or quarts, and freeze until needed.
