Turkey
Tortellini Soup
6 ounces cheese-filled tortellini
3 tbsp margarine, or butter
1 cup chopped onion
1 can (28 ounces) Crushed Tomatoes in Puree
1 large carrots - peeled & thin sliced
1 tbsp chopped fresh basil leaves
1 tsp granulated sugar
1/8 tsp white pepper
1 tsp salt
1 3/4 cups turkey stock
2 cups chopped cooked turkey
Prepare tortellini according to package directions.
Meanwhile, melt margarine in 3-quart saucepan over medium
heat. Add onion and cook 4 minutes or until onion is transparent, stirring
frequently. Stir in tomatoes, carrots, basil, sugar, pepper, salt and broth.
Increase to high heat, bring to a boil,
reduce heat, cover tightly and simmer 10 minutes. Stir in tortellini and turkey.
Cook until thoroughly heated
Cooking time - 10-20 minutes Yield - 6 servings
