Al Fresco on Mixed Greens
1/2 cup dry bread crumbs
1 tsp salt
1/2 tsp black pepper
1 tsp dried dill weed
1 tsp paprika
1/2 cup grated Parmesan cheese
1 pound turkey breast cut into stir fry strips
3/4 cup fat-free Italian dressing, divided
8 cups mixed salad greens
1 small red onion, thinly sliced
2 medium tomatoes, seeded & chopped
2 tbsp fresh chopped parsley
Preheat oven 450°F.
Combine bread crumbs, salt, pepper, dill, paprika and
cheese in plastic bag.
Dip turkey strips in Italian dressing (about 1/2 cup).
Place dipped strips into plastic bag and shake to coat with crumb mixture.
Place coated strips on baking sheet sprayed with cooking
spray. Bake 10 minutes until lightly browned and no longer pink inside.
Place mixed greens on a serving
platter, decoratively arrange onion, tomatoes and turkey strips over mixed
greens and sprinkle with parsley. Drizzle remaining dressing over all.
